Vegetable Dum Biryani

Hindustani Handi Vegetable Dum Biryani is a fragrant and flavorful rice dish, where layers of marinated vegetables, aromatic spices, and basmati rice are slow-cooked together in a traditional clay pot (handi).

• Wash the basmati rice thoroughly until the water runs clear. Soak for 30 minutes, then drain.
• In a large pot, bring water to a boil, add the whole spices (bay leaves, cardamom, cloves, cinnamon), and salt.
• In a mixing bowl, combine the vegetables with yogurt, ginger-garlic paste, red chili powder, turmeric, garam masala, coriander powder, cumin powder, lemon juice, and salt.
